Tropical Paradise Cocktail

This winter seems to be dragging on forever. Even here in the South we have had snow and ice TWICE! I can only imagine how much everyone else wants spring, I know I can’t wait much longer.

This leaves me longing for a tropical getaway. Since that clearly isn’t happening any time soon I had to make due. This desire crept into my cooking with Tropical Granola last weekend.

Yesterday it was nearly 80 degrees. Didn’t we just have ice last week?! The tropics were calling me again, this time my yearning was to include my new blueberry rum my husband brought home from Puerto Rico last month.

At first I was thinking a mojito. I love mango mojitos so I was thinking along the lines of a blueberry mango mojito. Then I thought about pineapple, banana and orange juice.

I decided to go for a frozen type drink. Not completely like a frozen margarita or smoothie, but close. Remember, it was almost 80 here and I was a little hot playing outside with the kids! So I fixed myself this drink and off to the wrap around porch I went. I hope you enjoy it too!

Tropical Paradise Cocktail
1/4 c. frozen mango, diced
1/4 c. frozen pineapple, tidbits or diced small
1/2 c. orange juice
2 oz. blueberry rum
1 oz. creme de banana
Seltzer

Place the fruit and orange juice in a blender. Mix until fruit is in a pulp or “mash” form. Add the liquors and blend thoroughly. Pour in a glass and add as much seltzer as desired.

You could also use fresh fruit and ice if desired.

Yields 1 serving

    i like me a mojito, too 🙂 Blueberry rum sounds most intriguing.

    Checked your blog as I hadn’t gotten any posting notifications in my email box lately. Looks like you’ve been putting posts out, but WordPress has dropped my follow. Looking more closely, seems they’ve pulled all my follow notifications. Huh. Must do something about that. Certainly do not mean to be a stranger!

    Great drink, though can only imagine 80F. -4 high here today 😦

    This looks so refreshing. I would drink it in the middle of winter. Did you know that people become most thirsty when it is very cold. I drink everything ice cold in winter. Thanks for sharing!!!

      I am already thinking of today’s cocktail. I am sitting on the porch pondering it now, such a gorgeous day here. During cold weather I drink more hot beverages with liqueurs, cold cocktails just don’t happen often for me. Now with the weather warming let the cocktail season begin!

        Strangely, we drink more cold beverage over winter. That extreme cold tends to make one so thirsty. I have been drinking cold orange juice the whole day long!
