Coconut Dark Chocolate Chip Cookies

Yesterday was our second snow day. Mind you the first day there was no snow, not until the kids went to bed. So after being cooped up with the kids and getting some play time out in the snow it was time to warm up the house. Most people might start a fire or turn on the fireplace, I wanted to bake cookies!

Coconut Chocolate Chip Banana Muffins

I have been wanting to make these muffins for quite some time now. What has been stopping me, well my three sons. Every time I buy bananas they eat them so quickly I don’t have a chance to ever see them ripen enough to use for baking! I finally got smart and got a HUGE bunch of bananas. Coconut Curry Lamb Meatballs Over Rice

My husband and I really enjoy Indian food. Whenever we go out of town we look for Indian restaurants because there aren’t many where we live. That means we cook Indian at home, certainly not a bad thing since that means we can customize recipes to our taste. They may not be authentic, but we certainly like them! Josh is even our Naan baker so we try to have a supply in the freezer for curry nights.
