Sean and I are usually out most mornings. We drop off Ewan at preschool and then head to the gym. If we are lucky we have time to run an errand before it is time to pick up Ewan. Then there are days when there is just too much to do at home we don’t go out in the morning. Yesterday was one of those days…and Sean got to enjoy this smoothie for his morning snack!
According to him it is “the best smoothie ever”. Remember, he says everything is the best ever! Live life in the moment I guess. At least I always know that he appreciates my cooking!
This is a super easy smoothie that is friendly to most diets. I opted not to use yogurt and go with coconut milk for a piña colada flavor making it dairy free, gluten free and vegan. I hope you enjoy it as much as Sean did.
Mango Piña Colada Smoothie
3/4 c. pineapple, chopped small
1/2 c. mango, chopped small
1 c. coconut milk beverage or lite coconut milk
Ice
Combine the pineapple, mango and coconut milk in a blender and mix until smooth. Add as much ice as you want to get desired texture. I used frozen fruit so I didn’t need too much.
Yields 1 serving

I do weight machines 2 days a week, yoga once a week and the treadmill and/or elliptical 3-4 times a week. Next week gets tricky since the boys begin swim lessons at the gym so I’ll be going in the late afternoon instead of morning…routine change. The boys will eat dinner there while I workout and then they swim. You’ll be seeing posts about packable and freezer friendly dinners next week probably! Enjoy the weekend.

I have never been able to find the time to do anything at home, seems there is always somebody bothering me, something needing cleaning or just plain chaotic! I have a road bike I have put on a stand and never got to using it. Besides that, the two hours all to myself at the gym is heavenly, I NEVER get two hours at home!
I have thought about doing that with my bike again… but, yes, mother is always needed. I am having trouble facing this reality – always hoping, in vain, hahaha. You and I do have so much in common. 🙂 Have a ****relaxing***** night!
The smoothie is so simple and straightforward but I love simple things that need minimum of effort to make. I’ll try this if I can get some decent pineapple here. Thanks and have a great Sunday!
Sometimes simple is the best. We used frozen pineapple which worked wonderfully. With our weather slowly warming the boys like smoothies more so I just stocked up on more frozen fruit, mango is our favorite!
