So if I put a vegetable in a cookie does it make it healthy?!? In this case, I must confess no. This is not a healthy cookie. It still contains a good amount of butter and sugar. AHH, but the sweet potato does add a smidge of nutrition, beta carotene, fiber, vitamins A and C. All right, it doesn’t add much of this to the cookie, but boy oh boy does it make a super yummy treat!
Sometimes things are worth a wicked indulgance. In the grand scheme this isn’t even too terribly wicked. Sometimes I just want a cookie for a special treat. Nothing too terribly sweet or covered in frosting like a cake or cupcake. Enter the cookie. It is portable, freezeable and the perfect serving size (assuming you control yourself).
In the past I made a sweet potatoe casserole that had orange and cranberries in it. I really liked the flavor combination so I figured why not put it in a cookie. While I do like cranberries in a cookie, this time I really wanted dark chocolate. I mean really, can you ever go wrong with dark chocolate?! Besides, dark chocolate pairs so well with orange, this is a match made in heaven.
The texture of this cookie is somewhat different than most chocolate chip cookies. It is not dense. It is not flat and melt in your mouth buttery. This delicous treat is more cakey. It is light and airy. You could maybe even say it is close to a muffin top, aka “muffie”. Whatever you want to call it, this is wonderful! I hope you enjoy it as much as we do.
Sweet Potato Chocolate Chip Cookies
3/4 c. mashed sweet potatoes
1 c. butter, softened
1/2 c. brown sugar
1/2 c. sugar
Zest of 2 oranges
1 tsp. vanilla
2 1/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 1/2 c. dark chocolate chunks (or chips)
Preheat oven to 350 degrees and line baking sheets with parchment paper or silpat. In a large bowl cream together the sweet potatoes, butter and sugars. Add the eggs, one at a time, and mix in well. Mix in the orange zest and vanilla.
In another bowl sift together all of the dry ingredients. Slowly add the flour mixture into the butter mixture and mix. Once everything is mixed well stir in the chocolate chunks. Drop by large spoonfuls on the cookie sheets and bake for 11-13 minutes.
