Bailey's Pumpkin DelightIt’s pumpkin time! This is my favorite food time of year. The weather cools and we can finally enjoy cooking indoors again. Hearty soups, stews, casseroles, comfort foods….all finally an option again. And then the pumpkin, I just can’t get enough of it. I can’t even count the number of times we’ve made pumpkin muffins already.

The only downfall is that our garden pumpkins were a complete failure this year. I think it may be a deer, but somebody has been nipping off the blossoms. We have ONE pumpkin, that’s right, just one. There are a couple others starting to grow now but I fear it may be too late for them to come to full size. Oh well, it’s always something with gardening. Good thing I can still buy pie pumpkins.

I think the boys may even like pumpkin more than me, especially pumpkin muffins. Jack and Ewan were up yesterday at 4:30 IN THE MORNING, sneaking muffins I made the night before and eating them in their room. There may have been some crumbs on the floor! What child in their right mind is up that early?!

This, however, is not a pumpkin treat they can enjoy. It’s all mine, grown ups only! This cocktail is simple and warms the body on a crisp fall evening. One of my favorite winter drinks is Bailey’s in hot chocolate so I got to thinking of Bailey’s and pumpkin. The result is creamy pumpkin goodness! I may make a virgin version for the kids using just pumpkin butter and hot chocolate, should they stop waking me up so darn early and causing sleep deprivation. Enjoy the adult cocktail version and relax, life is great during pumpkin season.

Bailey's Pumpkin Delight

Bailey’s Pumpkin Delight
6 oz. milk
2 Tbs. pumpkin butter
1 oz. Bailey’s Irish cream
1 oz. vodka
Whipped cream, optional

Warm the milk and pumpkin butter, being careful not to boil. Remove from heat and add Bailey’s and vodka. Pour into a mug and top with whipped cream if desired.

Yields one serving

      Thanks Liz! The mugs I brought back from Germany ages ago. I have four with different designs. Sun, moon and star one of those twice. The glass comes put of the metap base for washing. I LOVE them! I haven’t looked for them here but you might be able to find them, WMF brand. Enjoy your weekend!

    I would totally want to try this, but I’m missing the vodka….can i just skip it? I wonder whether it will still taste the same. i have a lot of baileys, all the flavours (original, coffee and hazelnut). I think i’ll use hazelnut flavour. Have a great weekend!

    Dang, Mom! You must be the best pumpkin muffin baker in the world if your sons are raiding the kitchen at 4:30 AM to grab a few! Never had a pumpkin-flavored drink before but I do like vodka. It’s a start. 🙂

      They are pretty delicious muffins!! I myself wouldn’t wake up that early for one though. Let’s just say my boys listen to their stomachs and sometimes they talk mighty early! As for the drink, it was my first venture into pumpkin beverages and I enjoyed it. Yes, vodka is definitely a good start!
