Hubby surprised me with a new Blendtec blender for my birthday, how exciting! I complained recently about how our blender was not working well at all. It’s been going downhill for a while now and anytime I added frozen fruit to a yogurt smoothie for the boys it hardly moved or crushed a thing.
I wanted a Blendtec but couldn’t bring myself to spend that kind of money on a blender so I added a simpler blender to my Amazon wish list, one that had good reviews for ice crushing. Imagine my shock when I opened the Blendtec. Even more shock when I opened my gift from my sister in law and nieces, the blender I had on my list!
The boys and I have been enjoying playing with the new blender. They have had smoothies for breakfast and I made peanut butter too. Their favorite is this “ice cream” though. Luck would have it I actually had bananas in the freezer, usually they eat them all before I get a chance to freeze any!
This recipe is not anything new, I’ve seen posts for it all over Pinterest and have wanted to try it out. Now was the time since I have a great blender, though a food processor would work too. The concept is the frozen bananas blend down into the texture and taste of banana ice cream, the perk being that you don’t have any of the fat. Just pure fruit.
We added peanut butter and cocoa powder. For my birthday cake I had a banana cake with peanut butter frosting between the layers and dark chocolate frosting on the top and sides so let’s just say I LOVE this flavor combination. The kids do too!
It truly does taste like soft serve ice cream! This is perfect for the boys since they usually stir their ice cream until it is soft and liquidy anyway. If you want it more firm you could easily pop it in the freezer for an hour or so. Next time I think we may go banana, chocolate and cinnamon. Ah, the possibilities!
Chocolate Peanut Butter Banana “Ice Cream”
4 bananas, sliced and frozen
2 Tbs. peanut butter
2 Tbs. cocoa powder
Place all ingredients in a blender and blend until smooth.
Yields: 4 servings
Great tip on the peanut butter – I’ve been doing the banana / coconut milk ice cream combo for a while now – next time I’ll be throwing in some peanut butter!
The peanut butter is a nice little protein addition. Coconut milk sounds great, will have to try that.
