Waffles are one of those things that are so easy to make I can’t help but wonder why anyone would ever buy store bought. The time you put in is so minimal and yet the flavor difference between homemade and store bought is extreme.
Josh and I have had our waffle iron since we got married. It was one of the items on our registry and let me say it gets used! We certainly use it more now that we have three boys who are always hungry, but even when it was just us waffle breakfasts were not uncommon.
I think the thing I like most about waffles is how versatile they are. Sure, you can go the traditional route and cover them in maple syrup. Are you one of those people that has to have syrup in every single hole??!
My boys have always been big eaters. Add in 2-3 swim practices a week and they are truly bottomless pits. They wake up in the morning and the first thing I hear is “what’s for breakfast?” As soon as they walk in the door after school it’s “what’s for snack?” They finish swim and say “did you pack a snack?”
Do you perhaps see a theme here?! It’s hard to keep up with their appetites without falling into the prepared food pit. The pantry is usually well stocked with various nuts which they love. Cheese and yogurt in the fridge. Plenty of fruit.
Despite the lack of posts lately our kitchen has been extremely busy. It’s the end of the school year and things are just crazy busy. Swim practice four days a week has started. The kids are playing outside. The garden needs tending…the work never ends.
That is why these bars have become a staple in our house. They are similar to these granola balls, just in bar form. I make them often, they disappear quickly with three boys!
I know what you’re thinking, another granola recipe?! Yes, another granola recipe. What can I say, we LOVE our granola. What isn’t to love, salty, sweet, crunchy, nutty, oat goodness.
The boys have been scavenging for snacks lately and then it dawned on me. We didn’t have granola. I try to keep it around since they eat it all the time, yet somehow life got busy and we haven’t had any for a while. It was time to make a new flavor combining my beloved dark chocolate gingerbread granola and the boys’ favorite vanilla almond granola.
In our house granola is good any time of the day. It all starts at breakfast, either plain or with yogurt and fruit. Then for Sean’s second breakfast. Ya know, after big brothers have left for school and he’s hungry again before he goes to school.
The other day Sean noticed something on the counter. It went like this….
SEAN: Why is the popcorn bowl out Mommy?
ME: Because Daddy had popcorn?
SEAN: When did Daddy have popcorn?
ME: After you went to bed last night.
SEAN: That’s not fair. Why don’t we get any?
You can guess that I’ll never win this little discussion. Especially since Sean thinks he is always right! To avoid discussing this all day with him I let him know that the boys could have popcorn after school if everyone behaved.
Well Jack and Ewan got home from school and started homework immediately since it was a swim practice day. They had some fruit and nuts while they worked. Then Jack had a major meltdown over his spelling homework. Continue reading →
It’s still pumpkin season, yippee! My favorite time of year. We go through granola phases and I had an epiphany last time I roasted some pumpkins. I was going to roast the pumpkin seeds and then realized we were in need of granola. Gee, think maybe we could kill two birds with one stone and put the pumpkin seeds right in the granola and roast it all together?!
Sometimes I amaze myself! Okay, so maybe I’m not the first person to come up with this idea. It did save me from an extra set of dishes and two rounds of pans in the oven though. I’m all for that. Continue reading →
