All right, today’s post is not some ground breaking recipe. It is, however, a school lunch that I make the boys often and get lots of comments so I thought I would share it. It seems many people need a little school lunch pick me up and everyone likes this idea. Hmm, perhaps a school lunch box series is in my future…
Pay close attention, this is very difficult. NOT! All you need is a tortilla, regular or whole wheat, peanut butter and an apple. Spread the peanut butter on the tortilla, place apple slices along the middle in a row and roll it all up.
As for the apples browning my boys have never complained. Perhaps because they are hidden in the middle and they don’t notice the color. If you wish you could easily put some lemon juice on the apple slices.
I make two at a time since I pack two lunches and use half an apple on each roll-up. Do whatever works for you. When I make just one I usually just eat the other apple half for breakfast or toss it in some oatmeal if I made it that morning.
If your school has a peanut ban try it with almond butter or another nut butter. Or I can imagine it would be great with cream cheese, especially maple cinnamon vanilla cream cheese.
Now to finish off the lunch just add in a veg and some kind of treat if you want. I recently discovered the organic rainbow carrots already cut at my local Kroger. This is a huge hit with my boys, heck they even eat the purple carrots right out of the garden with dirt still on them. I really can’t leave them anywhere near the garden unattended!
See, it really isn’t difficult to pack a healthy lunch. One that your kids will love! If I’m feeling really nice I might add in a homemade cookie! Jack is getting tricky though, he is eating more and more every day. Time for new ideas maybe…
Peanut Butter Apple Roll-up
Flour tortilla
Peanut butter
Apple, sliced
Spread a generous layer of peanut butter on the tortilla. Place the apple slices in a row across the middle, roll it up and slice in half.

We have rainbow carrots in our garden as well. The boys eat them right out of the ground, dirt and all!
Nice! And not a pice of plastic to be seen. Yes, it’s interesting as they grow, I can remember going through a large box of wheetbix type things every couple of days.
I’m needing to packer bigger lunches more frequently! I try to use no plastic at all, love all my stainless steel containers.
It’s not groundbreaking but certainly healthy and easy to make. I am thinking of adding some grated carrots and currants. I would use cream cheese because of peanut ban in school. Thanks for giving me some fresh ideas. Enjoy the weekend!
Always in need of school lunch ideas. I usually pack baby carrots with it. Some shredded carrot would be a nice addition to the roll up and the boys would certainly welcome dried fruit too!
