Aloo Parathas are something I've never made and when Bebe challenged me to make them for her #getcookingcookbookclub I was all in. • • The recipe is from Indianish by @pkgourmet @rituelhencekrishna and is pretty straight forward. • • Whole wheat flatbread dough gets filled with a mashed potato filling seasoned with cumin, cilantro, chili and cheddar cheese. The dough then gets rolled out, I had a couple with the filling leaking out slightly, more practice is needed! They cook in a hot cast iron skillet. • • They went well with leftover tomato soup. The boys had mixed feelings which surprised me a little. They generally enjoy all flatbreads. Happy Birthday to Jack! It's hard to believe but my first born turned 12 today. Bring on the preteens, like it or not! He was born tall and is still tall, loves to eat, read, hike, bike and swim. He helps in the kitchen, especially with baking and licking bowls! When we aren't driving each other nuts he's very lovey 💕 We went on a 6 mile hike this morning and the guys are out biking now. I'll have a pot of tea ready to go with this cake when they get home. Have I EVER properly introduced myself?! Probably not, so here goes....as my handle name states I have three sons and let me just say feeding them is just about a full time job! Not only are boys pigs but mine are swimmers so they eat even more calories as they burn a lot. Some other fun, odd and maybe unknown facts... ☆ ☆ I was born in Onio, grew up in Wisconsin, went to undergrad in Indiana and graduate school in Arizona. I've lived in South Carolina now for over 22 years. ☆ I was an exchange student senior year high school in Germany and junior year of college in Austria. ☆ It goes to follow my bachelor's degree is German! Master's in international management. ☆ I took home ec from 5th grade to 8th grade...it was mandatory for boys and girls. ☆ I've always liked baking, cooking I picked up more as an adult. ☆ I've been youngest, middle and oldest child. ☆ I interviewed with the CIA! ☆ As for the boys...they are 9, 10 and 11 years old. Yes you read that right!!! I had three boys in under 3 years and for one month a year they are all one year apart. ☆ We breed big boys, Sean was 10lb12.5oz. ☆ I HATE avocados!!! If you're looking for a #meatlessmonday dinner idea this Roasted Tomato Soup with Broiled Cheddar is fantastic. • • With temps finally cooling a little here soup season is slowly arriving. And what better classic than tomato soup with grilled cheese?! In this case the grilled cheese is a massive cheddar crouton floating on the soup. • • It's totally easy to make too, just roast canned tomatoes and garlic. Add to a pot with sauteed onions, the juices from the tomatoes, seasonings and veggie stock. Once it cooks for a short while blend to your desired consistency. • • I used a homemade sourdough loaf for the croutons and it was so yummy. It's perfect for less than fresh bread. From what I've seen from the challenge posts for this Raspberry Hazelnut Brioche Bostock I'm in the minority....I've actually made bostock before. • • Bostock is a great way to use stale brioche...or in my case bake homemade sourdough brioche and toast it slightly. • • First the brioche gets brushed with an orange syrup, though I was too lazy to dig in the back of the liquor shelf for orange and grabbed the raspberry liqueur instead! I still used an orange peel in the syrup. • • Then you smash some fresh raspberries on top, cover with a hazelnut frangipane and bake til puffy. Sprinkle with powdered sugar and serve. It's perfect for brunch or an afternoon coffee or tea break. If you're the person who hangs around the artichoke dip at a party then this Artichoke and Parmesan Galette is for you!! • • This genius @smittenkitchen creation is a cross between a quiche and a galette. The filling has sour cream, mayo and parmesan like the traditional dip plus eggs like a quiche. • • Spread all that goodness on a crust covered with thinly sliced artichokes. It bakes in a tart pan to avoid any filling spillage. • • Oh and the taste.....simply sublime. Artichokes in every bite...of course that's why Jack and Sean didn't care for it. Ewan and I enjoyed every single bite! I've planned to make this for days now and finally got around to this Baked Oatmeal with Caramelized Pears and Vanilla Cream. I'm kinda kicking myself I didn't make it sooner! • • First you bake the butter, vanilla sugar and pears. The house already smelled incredible at this stage! Then you add the oat mixture and bake again. The best part though is the cream cooked and reduced with vanilla sugar. I kinda wanted to drink it straight from the pitcher!!! • • It's the perfect hearty breakfast on a crisp autumn morning. It kept me fueled for a 5.2 mile hike I took with the dog.
