Yesterday I was going to make coleslaw for dinner. You know, the easy way out using just cabbage and store bought slaw dressing. Then I thought about it, surely I must have something in the house to make it different.
I have had coleslaw with pineapple and like it. So going along the sweet fruit idea I rooted around the kitchen and came up with some Gala apples. And then I thought, dried cranberries go really well with apples.
Most store bought slaw dressings are also pretty sweet. I decided to go tangy and used plain Greek yogurt and mayonnaise with lime juice. It came together well. The dressing was tart, the apples and cranberries sweet. The hubs and kids approved! Hope you do too, enjoy!
Coleslaw with Apples and Cranberries
1 large head of cabbage, shredded
2 Gala apples, shredded
3/4 c. nonfat plain Greek yogurt
1/2 c. mayonnaise
1/4 c. apple cider vinegar
Juice of one lime
1 c. dried cranberries
Sliced almonds to sprinkle on top, optional
I used the food processor to shred the cabbage and apples (shred the apples right when you need them so they will not turn brown), so nice and quick and uniform in size. The good old fashioned way would work too, your choice. Mix the yogurt, mayonnaise, vinegar and lime juice well. Assemble just before serving to avoid the slaw getting soggy. Pour dressing and cranberries into cabbage and apples. Stir well. Garnish with sliced almonds if desired.
Yields 8 servings
