The weather is FINALLY cooling off here. That means the highs are down to the low to mid 80s. The best part is the slightly cooler evenings and mornings. It is much more pleasant to be outside, the kids can play outside and I can get some garden work done. I managed to weed the entire garden and pull up the remaining tomato plants this morning.
This past weekend I picked the last of the spaghetti squash from the garden. We have eaten a few already and they are wonderful, but I felt the need to come up with another way to prepare them. We have had them with marinara sauce and eaten it like regular spaghetti, also pesto sauce and chicken. When I was in the mountains with my mom I made a spaghetti squash and cheese casserole.
Autumn is in full swing and that means plenty of fresh root vegetables. Nothing like some hot roasted root vegetables to warm the soul. We have had some cool days here and I certainly enjoy warm dishes those days, especially an easy one I can make while helping Jack with homework.
Yesterday I was going to make coleslaw for dinner. You know, the easy way out using just cabbage and store bought slaw dressing. Then I thought about it, surely I must have something in the house to make it different.
