Thyme Roasted Carrots

We go through a lot of carrots in this house. We have them with lunch. We snack on them with hummus. We put them in stir fry meals… So many possibilities.

I recently picked the last of our carrot crop from the garden. We planted orange, yellow and purple carrots. Lots of color is helpful when trying to get your children to eat their veggies! This is perfect for children who resist vegetables, so much color and good fresh flavor. Hope you enjoy it as much as we did.

Thyme Roasted Carrots
1 lb. carrots, peeled and cut into equal sizes
1 Tbs. fresh thyme
1 Tbs. olive oil
Zest and juice of one lemon
Salt and pepper to taste

Preheat oven to 375 degrees. Combine all ingredients in a bowl to evenly coat the carrots. Put coated carrots in an oven safe dish. Bake for 20 minutes, stirring midway through. Baking time may vary depending on thickness of carrots and personal preference for tenderness.

Yields 4 servings

    I don’t really remember what distracted me yesterday. I think I had too many messages to go through and I was baking and taking photos as well. I didn’t get good photos so I have to repeat the photo shoot today…I love thyme. It’s the only herb I have growing in a pot outside my house. It’s always such a pleasure to pick a few sprigs, smell them and use them for cooking, like the last time I made some mushroom soup. I love carrots too, I think I eat them at least 5-6 times a week! Omg you grew purple and yellow carrots, that’s so cool! I can’t remember when i last ate yellow or purple carrots. I do more sautéing, however roasting is a great idea too.       I know how hectic it can get! Good luck with the second photo shoot. We do so love carrots, and the boys certainly enjoy the different colored ones. Frankly I like the colors too! Enjoy the rest of the week.
