Tomorrow is Valentine’s Day, start your day off with something naturally pink and good for you. This strawberry banana smoothie is incredibly easy to make. It is great for breakfast or a snack. Kids and adults both will enjoy it.
I made these smoothies this afternoon for the boys to snack on. We have been snowed for two days now. School is cancelled again tomorrow and they already have next Monday and Tuesday off. That puts my three sons home since early release this past Tuesday until next Wednesday morning. Have I mentioned I’m going crazy?!
The good news is that my husband has been home too. With the roads iced over nobody is getting anywhere. He goes back to work tomorrow, ironic since he had it scheduled to be off Valentine’s Day. We were supposed to leave for the mountains today and spend the weekend there with my parents and brother. My brother was flying in from Seattle and got stuck in Chicago. He couldn’t get out until Saturday. Long story short he went back home. We are all bummed. The one good thing to come of this all is play time in the snow!
We cheered up and got into the Valentine spirit. Yesterday we made heart shaped cookies and the boys helped decorate. Today we made these smoothies, despite the cold temps. I used frozen banana and frozen strawberries. If you use fresh you may want to add some ice. I also used coconut milk because I am low on milk and don’t know when we will get more! The boys thoroughly enjoyed their smoothies with heart straws, it takes so little to excite them! Happy Valentine’s Day one and all!
Strawberry Banana Smoothie
1 c. yogurt
1/2 c. coconut milk
1 very ripe banana
1/2 c. strawberries, stems removed
Throw everything in the blender and blend until smooth.
Yields 1-2 servings
At least you got to play in the snow and you all seem to be enjoying yourselves tremendously. I was wondering why you used coconut milk, but I’ve just seen pictures from the south on Tv and I was quite shocked. Wish you a happy valentine!
I just used the coconut milk again in raspberry chocolate chip muffins this morning. We will get out today, but I don’t expect to find much at the store since they haven’t gotten deliveries.
I hope things get back to normal , soon. Coconut milk in muffins is delicious. I’ve tried it and proven it!
I was able to get my milk again yesterday!

Yes, your school schedule (or lack of) sounds nuts. Our school districts have already added days back to the year to make up for all that was lost. Still early days in the winter! But looks like you’ve enjoyed your snow. Great pix, thanks for sharing. Happy Valentine’s Day to you and yours.
We did enjoy the snow, but boy am I ready for spring! Also can’t wait for school to start again.
