Strawberry Mango Mint Smoothie
It has been another crazy week. Once spring arrives things seem to take off at a high speed. The kids went back to school Monday and I have been swamped since. This week I’ve been trying to balance the PTO checkbook and spreadsheets. I took over the treasurer position in February and still haven’t gotten it done. It isn’t exactly easy being thrown into the middle of somebody else’s system, not even my mathematics and business background helped! The end is in sight though.

I’ve also been busy planning the school spring carnival which is just around the corner. Luckily I have an awesome committee and things are coming together.

Tuesday I was planning to make this smoothie for the boys to have before we took Sean to the gym for his swim lesson. Unfortunately I was up to my eyeballs in PTO work so I didn’t get to it. I also forgot to start my sourdough another afternoon which I needed for dinner last night. Crazy busy week!

As it turns out it is a good thing I didn’t get to it until today. Yesterday we got some more plants in the mail, one of them a mojito mint plant. Josh planted it while I was at a meeting last night so I had enough mint to use. We have had several small shoots of mint pop up in the garden already but Saturday we used some for mojitos and Sunday I used some for a drunken fruit salad for brunch. There wasn’t much left!

Strawberry Mango Mint Smoothie

Spring is here in full force with warm temperatures and lots of pollen. The boys have been enjoying the great outdoors and coming home covered in dirt and mud. Today they had field day at school so I figured it would be nice to have a very cold snack when they got home. They have been running and playing games all day. I volunteered this morning and was quite entertained by the kids at the tug of war station!

The boys adore mango and strawberries so it was the perfect combination. Sean requested the mint. I used frozen fruit to keep the smoothie icy cold and thick. This is the last of my stash of strawberries from last year’s picking trips. Luckily I can restock when Ewan’s class has a field trip to the strawberry patch next week! The boys thoroughly enjoyed their smoothies!

Strawberry Mango Mint Smoothie

Strawberry Mango Mint Smoothie
1 c. frozen strawberries
1 c. frozen mango
1 c. plain yogurt
10 mint leaves

Place everything in the blender and blend until smooth.

Yields: 2 servings

      Thanks! Pineapple is another favorite flavor here so I’m sure we’ll make it into a smoothie soon enough. The glass is actually one of my canning jars! I love using all the different jars as glasses too.

    We are completely obsessed with strawberries at the moment. How do you feed three boys?!?!? I have two and feel like the girl eats *so* much less. Boys are insatiable. 🙂

      Thanks Shanna. We are also very into strawberries as well. We have a field trip to go picking next week and can’t wait. We usually make several trips to the strawberry patch a year. Then the blueberries. I love summer fruits and veggies!

      Luckily hubby does all the tilling for the garden and makes the rows. We both plant and I do most of the harvesting. It is a successful joint venture, weather permitting!
