Every time I plan to get caught up blogging something seems to happen lately. I think I’m going to have to come to the realization that our lives are just permanently hectic!
Jack was recently home from school for five days. It wasn’t so bad the first couple days. He actually napped a bit and was pretty cuddly and adorable. Lack of energy will do that to him. By the last day, once he was already fever free for 24 hours, he was driving me completely insane.
His energy was back. His appetite was back. His attitude was back. I was miserable.
What do you do when one kid is home sick and you’re losing your sanity? Well I baked. Not a whole lot, after all somebody would have to eat it. I kept up on my bread baking. I also tried out some new recipes for my cookbook club.
Then I went scavenging in the pantry and came across half a bag of butterscotch chips. Not too long ago I made a banana bread with chocolate chips and butterscotch chips, thus the half a bag left.
It wasn’t enough to make oatmeal scotchies but certainly chocolate chips could fill it out to have enough chips.
And what a brilliant idea it turned out to be. The cookies were perfect, a hybrid of chocolate chip cookies and oatmeal scotchie cookies.
The recipe isn’t anything ground breaking, just take my oatmeal scotchie recipe and use half butterscotch chips and half chocolate chips.
I’m happy to report Jack is back in school and I’m able to go to the grocery store again. Not that scavenge baking isn’t fun, but it’s nice to have a fully stocked kitchen again. That and I have a stash of this cookie dough in the freezer for any “cookie emergencies”!
They look great all the same. I love butterscotch. One of my favourite chips!
