Last summer we had a new Kroger open nearby. Since it was summer break I had all three boys with me when I went to the grand opening. They quite enjoyed themselves, between all the samples and seeing many of their friends it was a fun day.
One of the samples they had was a cheese spread. It’s actually a local product that comes in many flavors. Ever since then Jack has been a little hooked!
I don’t buy it often, but any time Jack goes to the store with me he begs for it. Then it dawned on me that I could just try making it at home. I usually have all the ingredients so there really wasn’t any stopping me.
This particular flavor combinations is one of Jack’s favorites. The store bought one has smoked gouda which we do all enjoy, but I am using sharp cheddar here since I always have it. Smoked gouda doesn’t last long in this house!
A good quality smoked bacon gives this spread a wonderful flavor. Especially when paired with sharp cheddar! This has become a favorite at Friday night carpet picnics in our house. It also makes a good sandwich for Jack’s lunch.
Bacon and Cheddar Cheese Spread
8 oz. cream cheese, softened to room temp
1/3 c. mayonnaise
4 oz. sharp cheddar, shredded
3 slices thick cut smoked bacon, cooked and chopped
2 Tbs. chives, chopped
1 tsp. garlic powder
Mix all ingredients by hand in a bowl until well combined. Cover and chill.

You’re back! So glad to see you again. I do most of my shopping at Kroger now. It’s the closest grocery store and I drive by there nearly every day.
I love simple and straightforward recipes. This must taste really good. I think I can add nicely diced and cooked chorizo or even diced sun-dried tomatoes in oil.
I also make one with sun dried tomato pesto. Jack LOVES that one too!
