Catching Up with Chocolate Chip Oatmeal Scotchies

Every time I plan to get caught up blogging something seems to happen lately.  I think I’m going to have to come to the realization that our lives are just permanently hectic!

Jack was recently home from school for five days.  It wasn’t so bad the first couple days.  He actually napped a bit and was pretty cuddly and adorable.  Lack of energy will do that to him.  By the last day, once he was already fever free for 24 hours, he was driving me completely insane.

His energy was back.  His appetite was back.  His attitude was back.  I was miserable.

Hazelnut Chocolate Fig Muffins
This week is going to be a little crazy for us since all three boys have swim lessons starting Tuesday. I decided to survive this schedule change it is going to require some planning ahead. Our biggest issues are dinner and breakfast. The boys will be eating their dinner at the gym twice a week while I work out and then they will have swim lessons. As for breakfast, Jack tends to sleep a little later the morning after swim so it will need to be portable to eat while walking to the bus.

Lately I have been craving some good old German dessert. Back in the day, not that I will age myself with specific dates or numbers, I spent my senior year of high school in Germany. After an unpleasant experience with my first host family I had a wonderful time with my second family. My host mother, Mama, was the baker, my host father, Papa, was the cook. It was a division of labor that worked quite well.

Chocolate Coconut Orange Cake

Liz over at My Favourite Pastime recently had a recipe for coconut orange cake. The timing could not have been better. I have been wanting to make a cake for afternoon tea and this looked perfect. It is made in a loaf pan so the size was right, many other cakes would have given me too many leftovers that I would certainly indulge in! The flavors sounded heavenly, I love coconut and orange. Better yet, it would work for my craving, chocolate and orange. For some reason I have been wanting something chocolate and orange, all I needed to do was add a little chocolate to Liz’s recipe. Chocolate Cinnamon Peanut Butter and Apples

You just can’t go wrong with apples and peanut butter. It is a snack staple in our house. My boys like to just chow down on an apple, but of course sliced with peanut butter is extra special. If the boys had free access to apples we would probably go through at least ten pounds a week! I can’t fill the fruit bowl anymore because they eat them so quickly, I even find apple cores up in their bathroom trash can or better yet under their beds!
