Muffins are one of my favorite things to bake. They are quick, easy and good to eat any time of day. Plus they are already individual servings. Kid friendly. Portable. I could go on forever, but I think you get the idea.

Inspired by my coconut chocolate chip pear tea cake recipe and using various ingredients I found when stocking the new pantry I came up with this recipe.  Everyone in the family loves pears and they are still pretty good from the store.  My problem is they don’t last in the house so I usually don’t get a chance to bake with them. To say that these muffins are popular with the kids is putting it mildly! What can I say, I seem to have outdone myself. Frankly, I’m a little surprised.

The boys usually like just about every muffin. Favorites tend to have chocolate chips (orange coconut chocolate chip mini muffins) or peanut butter (peanut butter chocolate chip muffins). So it’s been a while since I posted. Why is that, well because I’ve had a complication from my surgery which was five weeks ago. By week three post surgery I was pretty much back to normal. Then out of nowhere I was in such extreme pain I curled up in the fetal position on the floor putting the boys to bed one night.

Needless to say the pain didn’t go away as I was hoping. On the fourth day I went to the doctor. Long story short I was healing wonderfully but was suffering a diverticulitis flare up. So anyway, I went on a short liquid diet and now am on a low residue diet. This is extremely difficult for me as I am craving my usual fruits and vegetables which are now verboten. I am stumped every day as to what to eat. I can’t have what I want. I haven’t been cooking like usual lately, thus no blog posts. Continue reading

Where did the time go? How is it only two days until Thanksgiving?! Ewan just had his birthday this past weekend so things have been crazy busy here. Thanksgiving always comes too quickly for me since his birthday is right before the big day. A couple years ago his birthday was on Thanksgiving and that made things easier, his birthday meal and dessert were just all part of the super duper big day.

Ewan also had his Thanksgiving program at school so I baked an apple pie. Then his birthday treat for school another day. Birthday cake and cookies for the big day…you get the idea, I’ve been busy baking and cooking. It is actually a relief that I don’t need to cook for Thanksgiving this year. We are going out for the first time ever. We are headed up to the mountains and will have our meal at the Biltmore Estate. Continue reading

Our summer continues to be crazy busy, and that is without vacation!! The two older boys still have swim practice five days a week, meets two evenings a week. Needless to say that makes dinner time crazy. The only relaxed dinners are on the weekends. Otherwise we are packing dinner to eat at the meet or we get home just before six and have dinner that I prepared earlier in the afternoon or something I can throw together quickly. Continue reading
