Curry Roasted Green Beans, Sweet Potatoes and Chickpeas
It’s a new year and many people tend to start eating healthier right about now. We try to eat a well balanced diet year round at our house, though during the holidays with so many Christmas cookies, fudge and other goodies around it tends to get sugar heavy. It doesn’t help when I have three boys who sneak things, like the cookies their Grandma brought that I had in the garage freezer. Let’s just say there is powdered sugar everywhere! Seems I can’t hide things in the freezer anymore, I’ve been found out.

Mediterranean Lentil Salad
Life has been crazy lately. Let’s call it the end of school year madness. Field trips, end of year parties, preschool graduation, Kindergarten graduation, add in swim team practices and you have madness!
Jack and Ewan are on the swim team this summer for the first time and practices started a few weeks ago. This means picking up Jack at the bus, rushing home for a quick snack and rushing off to the gym. It also means not getting home until just before 6PM. So what about dinner?!
If all goes well I do all my prep work earlier in the day and just need to heat things up when we get home. Or better yet, I make a salad like this Mediterranean lentil salad. Make it in the early afternoon, throw it in the fridge and you are good to go.
Chicken and Lentil Stew
We survived our first week of swim lessons! My best laid plans were not a total success. I packed dinner for the boys to eat at the gym, however, Jack was the only one that actually ate. Seems Ewan and Sean were too busy glued to the television in the babysitting room to bother with dinner. I wonder why they complained about being hungry after lessons?! Continue reading
