As a result of our scrumptious Thanksgiving dinner at The Biltmore Estate I have a new obsession, chocolate gingerbread with citrus. I had the most delicious chocolate gingerbread cake with a citrus cream sauce for dessert that day. I remember it fondly and have recreated those flavors a few times, the cake version to come soon once I make it again.
This isn’t so much a recipe as it is a way to use the Dark Chocolate Gingerbread Granola recipe I posted last year. I gave it as teacher gifts and to several friends and was told it is seriously addictive, don’t say I didn’t warn you!
I recently made my first batch of this granola for the season, I’m quite sure there will be a couple more batches before the new year. Anyway, after I made the granola I got to thinking how I could add my new citrus twist to it and the first thing that came to mind was a yogurt parfait. The boys enjoy yogurt and granola for breakfast or as a snack. Let’s just say they really like yogurt and the granola is an added bonus.
As I said before, this really is just a guide how to assemble the parfait, do it as you wish. I prefer Greek yogurt, but you could easily use regular. Make one serving or make enough for the whole family. One of these would be pretty tasty Christmas morning, I may have to make some to hold the boys over until brunch is ready. After all, how could I possibly expect them to go until 10 or 11 in the morning with no food?! Maybe next time I will add orange zest to the granola before I bake it to get my citrus fix!
Chocolate Gingerbread Granola Orange Yogurt Parfait
Plain yogurt, Greek or regular
Sweetener of your choice, stevia, honey etc.
A few drops orange extract
Dark chocolate gingerbread granola
Mix sweetener and orange extract into the yogurt. Place a layer of yogurt in a bowl or glass, then granola and repeat again.
