It’s Valentine’s week and that means lots of chocolate. This makes Sean very happy, my chocolate monster! We started out our chocolate adventures on the healthy side with these dark chocolate covered almonds.
Almonds are a healthy fat, dark chocolate is good for your heart. How could you possibly go wrong?! All right, portion control may be a problem for some of you so be very careful. As a result of our scrumptious Thanksgiving dinner at The Biltmore Estate I have a new obsession, chocolate gingerbread with citrus. I had the most delicious chocolate gingerbread cake with a citrus cream sauce for dessert that day. I’m sure you have all seen the mini muffin “donut” craze on blogs already. I have been wanting to try it out and have several ideas. This particular muffin wasn’t even on my radar, but as I headed up to the mountains with the boys I knew I wanted to try something. I was first thinking something zucchini since it is plentiful in the garden right now. I brought up several zucchini with us, but alas, I have eaten most of them already!
I hope ya’ll enjoyed Thanksgiving. It seems so long ago, life has been super crazy since we returned home Sunday afternoon. There was the usual unpacking, laundry and getting everyone organized. Then I made an Advent calendar, well boxes for each day, for the boys. Talk about a rush job, it was already the first day of Advent! We got a Christmas tree and put it up. Our dog was sick. I took her to the vet Monday and found out she has Addison’s Disease. After a couple days in the hospital I bailed her out which cost me a fortune. All that and then our usual madness this week has been crazy. Continue reading
