Easy Agua Fresca

Agua Fresca

The title of this post may be confusing you. Isn’t all agua fresca easy to make?! Well, I suppose it is. But this version is even easier, I promise! It uses an ingredient most of you probably haven’t even thought about.

Perhaps you don’t know what agua fresca is. It is simply water and fruit, combine the two and you have a very refreshing drink for those hot summer days. It may only be spring still, but here in South Carolina the heat has kicked in full force.

In My Kitchen – May 2015

As you may have noticed I have not posted much lately. It has been beyond crazy busy here.  I was busy planning our school’s spring carnival and it finally happened last weekend.  As if I wasn’t already stressed, Jack decided to fall and cut himself just as setup for the big event began.  I took him to the school nurse who said he really should go to Doctor’s Care.  The cut was too big for DermaBond so it took three people to hold him down while another put in three stitches.  STRESS!!!  Luckily we made it back before the carnival began and I had an awesome committee and volunteers who set it all up while I was gone.

Then this past week was Teacher’s Appreciation week at school.  We had treats for the whole school staff all week.  One day I baked an Apfelkuchen, Mandelkuchen, and blueberry crumb bars.  Another day I felt like I spent all afternoon cutting watermelon, cantaloupe, honeydew, pineapple and making fruit kebabs.  The last day it was a batch of chocolate chip cookies and double dark chocolate chipotle cookies. Hubby surprised me with a new Blendtec blender for my birthday, how exciting!  I complained recently about how our blender was not working well at all. It’s been going downhill for a while now and anytime I added frozen fruit to a yogurt smoothie for the boys it hardly moved or crushed a thing.

I wanted a Blendtec but couldn’t bring myself to spend that kind of money on a blender so I added a simpler blender to my Amazon wish list, one that had good reviews for ice crushing. Imagine my shock when I opened the Blendtec. Even more shock when I opened my gift from my sister in law and nieces, the blender I had on my list! Continue reading

Garden Update

We finally got the garden up and going several weeks ago. It was a multiple weekend project. Josh tilled the entire garden, made the rows, added cow manure, placed the irrigation across the rows and then we put the tarp on top to minimize our weeds. THEN it was time to plant the seedlings or vegetables that go straight from seed.

It was an adventure! The boys helped do some of the planting. In their Easter baskets they received some carrot seeds, flower seeds, a shovel, small rake and a strawberry plant. They were so incredibly excited! Daddy took them out to plant everything while I cleaned up the brunch mess. His idea of adult supervision differs from mine….they did whatever they wanted so we have carrot seeds all over and flower seeds in the vegetable patch as opposed to the flower pots. They had fun though and that is what counts….I will get more flower seeds though!

Strawberry Mango Mint Smoothie
It has been another crazy week. Once spring arrives things seem to take off at a high speed. The kids went back to school Monday and I have been swamped since. This week I’ve been trying to balance the PTO checkbook and spreadsheets. I took over the treasurer position in February and still haven’t gotten it done. It isn’t exactly easy being thrown into the middle of somebody else’s system, not even my mathematics and business background helped! The end is in sight though.

I’ve also been busy planning the school spring carnival which is just around the corner. Luckily I have an awesome committee and things are coming together.
