Pumpkin Butterscotch Pudding

Pumpkin Butterscotch Pudding

Halloween may be over but it is definitely still pumpkin season! I need to get more pumpkins to roast, purée and freeze for my stash before the season is over.

This little treat is the perfect autumn sweet. It is quick and easy to make so in my book that is just awesome! Then of course it can be packed in glass or stainless steel containers for a school treat. The boys beg for pudding cups which I refuse to buy, this homemade version though is perfect.

Chocolate Banana Yogurt Pops

Chocolate Banana Yogurt Pops
Here in South Carolina August is pretty much the dog days of summer. It’s been hot up until now, but this is the month things really kick into high gear. As in highs in the upper 90s to low 100s with humidity to match. I vividly remember being very pregnant with Jack in August of 2007 which had 14 days of 100 degrees or hotter! Continue reading

Dulce De Leche

Dulce De Leche
I feel I must begin this post with a warning: this recipe is extremely addictive, just ask my three sons!! First they enjoy a lick of the spoon after I season it a little, then they are asking to have it all the time. Frankly I’m surprised they haven’t gone hunting in the fridge for it.

Not only is it delicious, but this dulce de leche is so incredibly easy to make. How much easier can it get than opening a couple cans of sweetened condensed milk, pouring it into jars and letting the slow cooker do the work? I can’t think of much else that is easier than that! And the end result is completely sublime.

Chocolate Peanut Butter Banana “Ice Cream”

Chocolate Peanut Butter Banana Ice Cream
Hubby surprised me with a new Blendtec blender for my birthday, how exciting!  I complained recently about how our blender was not working well at all. It’s been going downhill for a while now and anytime I added frozen fruit to a yogurt smoothie for the boys it hardly moved or crushed a thing.

I wanted a Blendtec but couldn’t bring myself to spend that kind of money on a blender so I added a simpler blender to my Amazon wish list, one that had good reviews for ice crushing. Imagine my shock when I opened the Blendtec. Even more shock when I opened my gift from my sister in law and nieces, the blender I had on my list! Continue reading

Dark Chocolate Pear & Toffee Truffles

Dark Chocolate Pear and Toffee Truffles
For some time now I’ve had a little shopping addiction at Whole Foods. Every time I go there I must get a bar of the pear and almond dark chocolate. It is simply my favorite flavor combination they have, not that there aren’t other good ones.

I recently got a bottle of pear liqueur just so I could make some pear and almond truffles. I was set to go, just in time for Valentine’s Day. Then I realized I used all my almonds to make the dark chocolate orange almonds. No problem, I’ll get more almonds. Oh wait, there is a problem.
