Pasta Salad with Tuna

Summer is almost over, I am counting down the days until school begins. These last couple of weeks have been pretty rough. The boys are getting bored, fighting, grumpy, tired… They certainly have their great moments, they are just fewer than usual. Plus for some unexplained reason they refuse to sleep. They are up around 5:30 in the morning which makes them tired and grumpy in the afternoon. The witching hours have returned.

Naps aren’t usually feasible, besides I want them to go to bed on time so Josh and I get a little adults only time. Speaking of which, Josh has been working long hours and six day weeks. This means it’s just me and the boys even more, making running errands insane to impossible. And of course the boys miss Daddy, Jack gets sad and cries at night if he hasn’t seen his Daddy that day.

So like I said it’s been rough. Because of the insanity of errands I have resorted to more cooking from the pantry and fridge. This is the first week I haven’t planned anything because I simply couldn’t get to the store.

The boys had a swim day so I needed a meal that I could make early in the afternoon and pop in the fridge. Then when we arrive home right at dinner time with three very hungry boys dinner would be ready to put on the table immediately.

Pasta Salad with Tuna

This meal fit all my needs and it used ingredients from the pantry, fridge and garden. Pasta salads are ideal this time of year since you can make it early in the day, thus boiling the pot of water before it gets too hot. Then you enjoy a cold meal when the heat is at it’s most ridiculous!

In my scavenging I came up with bow tie pasta, a favorite with the boys. Veggies were a little slim, tomatoes from the garden and some lettuce. I wanted to make sure I had plenty of protein since they would be famished after swim so I went with canned tuna and hard boiled eggs. Then to up the protein even more and add fiber I put in some chickpeas which I always have on hand for salads. The dill was pathetic looking so fresh thyme from the garden would have to do. And finally for my little addicts, some capers. If the boys had it their way they would eat a whole jar of capers!

This pasta salad really was a winner. The boys were over the moon happy with it. Ewan asked for seconds before he even finished his first serving. Jack had two servings as well. They asked if they could have it for breakfast. The only negatives in their eyes were the red tomatoes which they don’t like and not enough capers. I’m pleased they enjoyed it so much, hopefully you will too.

Pasta Salad with Tuna


Pasta Salad with Tuna
1/2 lb. pasta
1/2 c. mayonnaise
1 c. chickpeas
1 c. cherry tomatoes, halved or quartered
2 (5 oz.) cans tuna, drained
2 Tbs. capers
1/2 onion, diced
Fresh chopped herb of choice (dill, thyme etc.)
Salt and pepper to taste
3 hard boiled eggs, quartered or sliced

Cook the pasta until al dente according to package instructions. Drain the pasta and place in a large bowl. Add the mayonnaise, salt and pepper. Stir until the pasta is thoroughly coated. Add all the rest of the ingredients except the eggs and stir until combined. Place slices or wedges of egg on top, cover and put in the fridge until chilled.

Yield: 6 servings

Smoked Gouda Crab Mac & Cheese

I am not sure how it happened, but it seems that up until now there has been a misrepresentation of our eating habits on this blog. Our middle son, Ewan, is a mac and cheese fanatic. Yet somehow I have never posted a mac and cheese recipe, how is that possible?! Trust me, we make our share of mac and cheese in this house.

It also happens to be the case that I rarely make the same mac and cheese. I experiment with different cheeses or use all kinds of add ins. I like to toss lots of goodies into the mac and cheese so I can have a full meal in the one dish. So today I bring you a recipe for mac and cheese with crab and broccoli, in honor of Ewan, my crab loving mac and cheese boy!

Our tomato plants are finally slowing down. While I am thrilled with the less work that it gives me, I am already going to miss all the fresh tomatoes! Pasta with Chicken, Tomatoes and Feta

This is one of our favorites in the summer. Somehow it just seems very refreshing and not too heavy. It has everything in one dish which I of course love!

I usually make this with orzo pasta. That would be my preference, it really is great. Alas, I have not found a high fiber orzo pasta. So this time I made it with mini rotini since it has fiber in it. I just have to prioritize how I want to eat my “empty” carbs. This time common sense and health won out!

The boys all just love feta cheese. They even ate the tomatoes when I made it! They can be hit or miss when it comes to eating tomatoes.

This combines all my favorites from a Greek tomato salad. The fresh basil, feta and lemon juice are so fresh and full of flavor. It tastes great leftover as a cold pasta salad, add cucumbers and it’s even better (leftovers may require a little added olive oil). I hope you enjoy it as much as we did.

Pasta with Chicken, Tomato and Feta
1/2 pound dry pasta
2 Tbs. olive oil
Juice and zest of one lemon
10 oz. cooked chicken, diced
1/2 pint cherry or grape tomatoes, halved or quartered
1/4 c. red onion, chopped
1/4 c. fresh basil, chopped
5 oz. feta cheese, crumbled

Cook the pasta to al dente, time will depend on which size/shape pasta you choose to use. Drain the pasta. Put the pasta, oil, lemon juice and zest in a bowl, allow to cool for about five minutes. Add the rest of the ingredients and stir until well mixed. Serve warm or cold. If serving cold cucumbers are a nice addition.

Yields 6 servings
