Today is Feeding My 3 Sons two year blogiversary. What better way to celebrate than with a refreshing warm weather drink, with a kick of course?!

Strawberry season is coming to an end in our neck of the woods and I choose to enjoy the bitter end with a drink. Of course I can still enjoy this cocktail with my stash of strawberries that we picked in the freezer! What better pairing than basil, remember I have lots of it in the garden. Mint crossed my mind too, but what the heck, basil it is. Don’t get me wrong, I’ll have this drink again with mint or mint AND basil!

RumChata Tea
I had every intention of posting some delicious recipes this week, especially some vegetables given our chocolate indulgences last week. Then this bloody cold weather came. Priorities shifted and now keeping warm is more important!

This beverage is so simple it really doesn’t require a recipe, but I thought I would share it with ya’ll anyway. I have been a tea drinker my entire life, raised by a mother who served us tea with cream and sugar. Feel sick, hot tea and cinnamon toast it is. The winter means even more hot tea.

The wonders of Pinterest never cease to amaze me. Over the long Thanksgiving weekend I was searching for Christmas cookie recipes on Pinterest. I figured maybe it was time to try something new, expand my horizons.

Well leave it to Pinterest to “force” me into trying something new. Somehow in my search for Christmas cookies I came across a recipe for a snickerdoodle martini. Well duh, I clicked that link. This when I first discovered RumChata. After reading this martini recipe I knew I had to have a bottle of RumChata.

I’ve had this apple cider sitting in the fridge waiting to be used. Whatever shall I do with it? The boys enjoyed some hot cider on a chilly morning hike, but I wanted to spike it up for the grown ups.

Then came the question of which alcohols to use. I was in the mood for spiced rum and it seemed to go well with cider. Then I was inspired, both by a mistaken purchase and memories of a favorite apple dessert.

Bailey’s Pumpkin Delight

Bailey's Pumpkin DelightIt’s pumpkin time! This is my favorite food time of year. The weather cools and we can finally enjoy cooking indoors again. Hearty soups, stews, casseroles, comfort foods….all finally an option again. And then the pumpkin, I just can’t get enough of it. I can’t even count the number of times we’ve made pumpkin muffins already.

The only downfall is that our garden pumpkins were a complete failure this year. I think it may be a deer, but somebody has been nipping off the blossoms. We have ONE pumpkin, that’s right, just one. There are a couple others starting to grow now but I fear it may be too late for them to come to full size. Oh well, it’s always something with gardening. Good thing I can still buy pie pumpkins.
