Toasted Coconut Ice Cream with Dark Chocolate and Almonds
Last year I received an ice cream machine as a gift, yet somehow I only used it once. It was time to change things and delve into the world of homemade ice cream. Since we recently went to our favorite ice cream shop up in the mountains I decided to make a flavor similar to one I enjoy there.

This is a wonderfully coconut filled ice cream with dark chocolate and almonds. Somehow many of my recipes seem to contain coconut, odd since I could not stand it growing up! I can’t recall when I began to like coconut, but there is clearly no stopping me now! Continue reading

Over the weekend I was at Trader Joe’s and was FINALLY able to find a turkey breast. I have been looking for some time and never seem to be there when a turkey breast is in stock, only the tenderloins. With a family a five a turkey breast is a wonderful thing. We can have it for dinner or slice it up and use it as lunch meat.

Garden Preparations

I have lost track of time, not sure how many weeks old my baby seedlings are! They are coming along beautifully. I can just taste the tomato cucumber salads. The homemade pesto on pasta and pizza. Mint in my mojitos or on fruit salad. Zucchini bread, grilled zucchini. Pumpkin EVERYTHING! Salsa, hot peppers on pizza… Boy oh boy is my mouth watering. All I have to say is this better be a good year for the garden, I have such big plans!

This has been such a crazy winter. We have had snow here, in South Carolina! It is warm, then cold, then warm, then cold again! Last year we planted the garden St. Patrick’s Day. This year we are still waiting. We are still expecting lows in the 30s next week so we wait. The lettuces are already planted, but they tolerate the cold better.

This year we put some covering over all the rows. We grow weeds incredibly well and I just couldn’t keep up with them, it is a HUGE garden. Someday the boys will be able to help weed, until then I hope this works!

Back when I first went to Germany as a 17 year old I remember having gebrannte Mandeln, cinnamon almonds, for the first time. At the time they weren’t common in the United States, these days you see them in malls, tourist sites and other places. I remember my love for them, fresh and warm wrapped in the paper cone.
