For a couple months now I’ve been joining Deborah Balint of Rainy Day Bites on Instagram for a monthly cookbook club. Each month Deborah chooses a new cookbook and anyone who wants to join in can cook along and post photos.
Needless to say I’ve come across many delicious recipes this way and so I decided to share some with you. Today I’m going to share this recipe for Bounty Brownies from Home Baked by Yvette van Boven.
I’m sure you have all seen the mini muffin “donut” craze on blogs already. I have been wanting to try it out and have several ideas. This particular muffin wasn’t even on my radar, but as I headed up to the mountains with the boys I knew I wanted to try something. I was first thinking something zucchini since it is plentiful in the garden right now. I brought up several zucchini with us, but alas, I have eaten most of them already!
This is one of those happy accidents. You see, I went to my pantry to get out some banana chips to make this granola, but to my shock I didn’t have any. I am not sure how that happened, I could have sworn I had some. I was just at Trader Joe’s, I would have gotten some if I knew I was out.
Liz over at My Favourite Pastime recently had a recipe for coconut orange cake. The timing could not have been better. I have been wanting to make a cake for afternoon tea and this looked perfect. It is made in a loaf pan so the size was right, many other cakes would have given me too many leftovers that I would certainly indulge in! The flavors sounded heavenly, I love coconut and orange. Better yet, it would work for my craving, chocolate and orange. For some reason I have been wanting something chocolate and orange, all I needed to do was add a little chocolate to Liz’s recipe. I have been wanting to make these muffins for quite some time now. What has been stopping me, well my three sons. Every time I buy bananas they eat them so quickly I don’t have a chance to ever see them ripen enough to use for baking! I finally got smart and got a HUGE bunch of bananas.
