In My Kitchen – May 2016

It’s May and spring is in full force here in South Carolina.  I originally had several things I was going to put in this In My Kitchen post, including things I’ve forgotten in recent months.  But then the weather got gorgeous and all I can think about is how much I am loving spring!

Thanks to the lovely Maureen over at Orgasmic Chef for this monthly roundup.   It’s always fun to peak into bloggers’ kitchens and see what is happening around this world.  I may be excited about spring here, but people in the southern hemisphere is welcoming autumn after a long summer.

So back to my excitement about spring.  Two foods shout “spring” to me, asparagus and strawberries.  Since our garden asparagus didn’t do too terribly well  (or it shot up before we noticed) I’ll stick with a strawberry theme for now.  This past weekend the boys and I went strawberry picking at Cottle Strawberry Farm.  I’ve been taking the boys there since they were babies in a carrier.  It’s a family outing I look forward to every spring.

In My Kitchen – April 2016

It’s April already and that means spring!  Bring on the fresh spring produce, asparagus, strawberries, lettuces…  I’m so excited.  Our garden is finally planted and as I write we are getting lots of rain.  I’m hoping to see some lettuce coming up soon.

A new month means it’s time for another In My Kitchen post. Thanks to the lovely Maureen at Orgasmic Chef for hosting this monthly roundup.  March was a busy month and yet I seem to have forgotten most of what happened in the kitchen!

In my kitchen I have some new purchases from an Etsy shop.  Let me just say Etsy is dangerous!  I justify it by saying I was spending my “play” money.  Every now and then I cash out my Ibotta account and spend the money on something I wouldn’t normally get.  This time it was a coconut shell salad serving spoon and fork.  I also got a set of 5 coconut shell dessert spoons.

In My Kitchen – March 2016

Spring is nearly here, can you feel it?  We survived February and I’m quite looking forward to a new month.  I wasn’t feeling up to full strength much of the month due to a cold that wouldn’t go away. Add in digestive issues and it just wasn’t a fun food month.  It was survival mode for a while, keep the boys fed and don’t fall asleep during the day! I’m finally feeling close to 100% and looking forward to another In My Kitchen roundup with our lovely hostess Maureen at The Orgasmic Chef.

In my kitchen, before I got sick Valentine’s weekend, I managed to whip up some gingerbread love shacks.  We didn’t get around to making gingerbread houses for Christmas so I figured some love shacks for Valentine’s Day would be perfect.  They were great, just the right size.  It’s a new cookie cutter, nice and small. Each house is pretty much a single serving, the boys were thrilled with these.

In My Kitchen – February 2016

Is the first month of the year really over already? In some ways it flew by and in others it dragged a little. I suppose that means it’s time for another In My Kitchen post.  Thanks again to Maureen for hosting this wonderful monthly get together.  As always it has been rather busy in our kitchen. This time around I’m not starting off with new kitchen items or food, but with my two budding sous chefs.

All three boys have always been by my side in the kitchen. They help, they eat while I try to cook….they are a constant in my kitchen. To help them along with their cooking skills I decided to let each of them have their own brunch. They would get to plan it and help cook.

Jack was first. For his meal he picked cauliflower crusted quiche (bacon, cheddar and broccoli) and a fruit crisp with crushed snickerdoodles on top (thanks Celia for the idea). Let’s just say it was pretty popular and Jack did well helping prepare the meal. He also enjoyed bossing his brothers around since he was the head child chef! The lesson on opening a bottle of bubbly was also a hit, especially when the cork hit the light fixture.

In My Kitchen – January 2016

Not only has another month passed by, it’s a whole new year!  The time just keeps flying by.  I’m joining Maureen at Orgasmic Chef for another month of In My Kitchen.  Maureen is our new fearless leader so stop on by her site and check out all the links.

Back in early December, which seems ages ago, I had a diverticulitis flare up which meant complete exhaustion, antibiotic side effects, pain and limited diet.  Needless to say not much happened in my kitchen.  Then came the holidays and the kids were with me constantly.  Josh worked insanely long hours.  We were all exhausted.

Despite all all that madness we had the best Christmas yet.  It was quiet and relaxed.  Brunch was fantastic and dinner was superb.  I didn’t get all the baking done I wanted to, but my mental and physical health were more important as I recovered.  Maybe we’ll make our mini gingerbread houses for Valentine’s Day!

Anyway, here is what happened in my kitchen.  Let me introduce you all to my new pantry.  My best husband ever built this and we put it in the kitchen the weekend before Christmas.  This is another reason I got less baking done since I was moving everything around in the kitchen!  It was so worth it.
