Pumpkin Cranberry Granola
It’s still pumpkin season, yippee! My favorite time of year. We go through granola phases and I had an epiphany last time I roasted some pumpkins. I was going to roast the pumpkin seeds and then realized we were in need of granola. Gee, think maybe we could kill two birds with one stone and put the pumpkin seeds right in the granola and roast it all together?!

Sometimes I amaze myself! Okay, so maybe I’m not the first person to come up with this idea. It did save me from an extra set of dishes and two rounds of pans in the oven though. I’m all for that.

Cardamom Orange Ricotta Toast with Dark Chocolate
The boys and I watched an episode of Giada in Italy over the weekend and were inspired. She shared a recipe for a ricotta toast her grandfather used to make her for breakfast growing up. My boys thought it looked good and immediately asked if we could make it.

Of course I wasn’t about to deny my boys a chance to experiment in the kitchen! I’ve made desserts with ricotta and put it on savory toast so the idea of a sweet ricotta toast was fun.

To say that these muffins are popular with the kids is putting it mildly! What can I say, I seem to have outdone myself. Frankly, I’m a little surprised.

The boys usually like just about every muffin. Favorites tend to have chocolate chips (orange coconut chocolate chip mini muffins) or peanut butter (peanut butter chocolate chip muffins). Dried Fruit Focaccia
The other day Sean and I had on Unique Sweets while I was getting our carpet picnic ready. Let’s just say this is a dangerous show to have on, so many delicious looking sweet treats. The good thing is that we don’t live near most of the places they go! Another good thing to come of it is that it is an inspiration, the result of which is this recipe.

Some restaurant on the show served a fruit studded focaccia for brunch. Why hadn’t I ever thought of that before?! I simply had to come up with a recipe for this. Sean agreed! Of course when he sees any food on television he usually wants it, “can we make that Mommy”!!

Chocolate Banana Peanut Butter Muffins
So it’s been a while since I posted. Why is that, well because I’ve had a complication from my surgery which was five weeks ago. By week three post surgery I was pretty much back to normal. Then out of nowhere I was in such extreme pain I curled up in the fetal position on the floor putting the boys to bed one night.

Needless to say the pain didn’t go away as I was hoping. On the fourth day I went to the doctor. Long story short I was healing wonderfully but was suffering a diverticulitis flare up. So anyway, I went on a short liquid diet and now am on a low residue diet. This is extremely difficult for me as I am craving my usual fruits and vegetables which are now verboten. I am stumped every day as to what to eat. I can’t have what I want. I haven’t been cooking like usual lately, thus no blog posts. Continue reading
