This is one of those happy accidents. You see, I went to my pantry to get out some banana chips to make this granola, but to my shock I didn’t have any. I am not sure how that happened, I could have sworn I had some. I was just at Trader Joe’s, I would have gotten some if I knew I was out.

Liz over at My Favourite Pastime recently had a recipe for coconut orange cake. The timing could not have been better. I have been wanting to make a cake for afternoon tea and this looked perfect. It is made in a loaf pan so the size was right, many other cakes would have given me too many leftovers that I would certainly indulge in! The flavors sounded heavenly, I love coconut and orange. Better yet, it would work for my craving, chocolate and orange. For some reason I have been wanting something chocolate and orange, all I needed to do was add a little chocolate to Liz’s recipe. Peanut butter blossoms are one of my favorite holiday cookies and I didn’t even make any this past Christmas. It was time to rectify that! So I made them for Valentine’s Day, well they are in my freezer awaiting Valentine’s Day. I am not the only one around here who likes peanut butter blossoms. A couple years ago when we had a holiday cookie exchange at my house I left my plate of cookies on the counter, never a good idea in this house. Before everyone left I went back in the kitchen to discover that the kisses were all missing from my peanut butter blossoms! Jack’s handy work!!
