Black Bean Soup
Now that it is slowly cooling off it’s time to get my soup groove on again. I just love soups, so versatile, easy and healthy. Let it sit on the stove all day and it’s ready to eat by dinner time. That is very important to me on swim days when I don’t have time to cook at dinner time, it must be ready as soon as I arrive home with three very hungry boys!

Not only is this black bean soup easy and healthy, it’s also pretty darn cheap. A bag of dried black beans won’t set you back much at all and the rest of the ingredients are usually around the house anyway.

Maple Cinnamon Vanilla Cream Cheese

We survived the first half week of school and now are in week two. I’m not sure who it was harder on, me or the boys. Last week Jack and Ewan were extremely cranky and tired after school which made my life miserable.

This week we are off to a better start. So far no after school meltdowns. Of course we have had some hiccups. Yesterday the boys were late getting home. Turns out their bus broke down and they had to change busses. This meant they walked in the house, put swim trunks on and grabbed a snack to eat in the car on the way to swim.

To say that these muffins are popular with the kids is putting it mildly! What can I say, I seem to have outdone myself. Frankly, I’m a little surprised.

The boys usually like just about every muffin. Favorites tend to have chocolate chips (orange coconut chocolate chip mini muffins) or peanut butter (peanut butter chocolate chip muffins). Long time no recipe post! This summer has been beyond insane. I am so ready for school to start up again. Swim has kept us extremely busy, more than I ever expected. Luckily my volunteering duties are nearly done. We only have the City Meet left and a banquet to plan. This week is our first week of no evening meets or practices. That’s right, all dinners at home!!

Chocolate Peanut Butter Banana Ice Cream
Hubby surprised me with a new Blendtec blender for my birthday, how exciting!  I complained recently about how our blender was not working well at all. It’s been going downhill for a while now and anytime I added frozen fruit to a yogurt smoothie for the boys it hardly moved or crushed a thing.

I wanted a Blendtec but couldn’t bring myself to spend that kind of money on a blender so I added a simpler blender to my Amazon wish list, one that had good reviews for ice crushing. Imagine my shock when I opened the Blendtec. Even more shock when I opened my gift from my sister in law and nieces, the blender I had on my list! Continue reading
