Long time no recipe post! This summer has been beyond insane. I am so ready for school to start up again. Swim has kept us extremely busy, more than I ever expected. Luckily my volunteering duties are nearly done. We only have the City Meet left and a banquet to plan. This week is our first week of no evening meets or practices. That’s right, all dinners at home!!

Peanut Butter Chocolate Chip Muffins
It is offcially summer break now! To start it off a bit rocky my husband had to leave the country for business the very first full day of break. That’s right, me and three rambunctious boys alone for nearly seven days. This calls for baking and keeping their mouths full. For our first morning without Daddy we made these muffins. They were a huge hit. Sean declared them “the bestest muffins ever”!
They provided the boys with enough energy to play outside and help in the garden. I planted some more zucchini and yellow squash seeds. Just because! I pulled up two big areas of lettuce last weekend and figured why not try to grow something it those spots. It is still a little early for the pumpkins seeds to go in and squash was the answer. We’ll see if it grows.
Chocolate Cinnamon Peanut Butter and Apples
You just can’t go wrong with apples and peanut butter. It is a snack staple in our house. My boys like to just chow down on an apple, but of course sliced with peanut butter is extra special. If the boys had free access to apples we would probably go through at least ten pounds a week! I can’t fill the fruit bowl anymore because they eat them so quickly, I even find apple cores up in their bathroom trash can or better yet under their beds!
Peanut Butter Caramel Apple Muffins
Our oldest recently turned six years old. Where on earth does the time go? Was it really six years ago that the doctor (1) told me “it’s a boy” and (2) said he’s big, as in 10 pounds 3.9 ounces?! So anyway, for his birthday we enjoyed a four day weekend in the mountains. The weather was wonderful and on his actual birthday we went apple picking. We went to Skytop Orchard and had so much fun. We picked over 30 pounds of apples!
