You might be questioning me already…just looking at the photo they don’t look like chocolate chip cookies. Chocolate chocolate chip maybe, but not regular chocolate chip cookies. There’s an easy explanation for that, these cookies are made with spelt flour. The problem was the name of the cookie was already long, adding the word spelt just didn’t sound right!
So what is spelt anyway? Simply put it is an ancient non wheat grain. Spelt flour does still have some gluten but is easier to digest than wheat flour. It also has a little more protein than wheat flour. It has a slightly sweet and nutty flavor, thus making it perfect for cookies with nuts.
This is a recipe I’ve been planning on posting for some time now. The biggest thing holding me back was the fact that the dish just isn’t photogenic. I’ve decided I don’t care anymore and think it’s worth sharing.
The original recipe is from The American Country Inn and Bed & Breakfast Cookbook. It was served at an inn in Virgina. I would have guessed Oregon since they grow a good amount of hazelnuts, shows what I know!
I never would have thought to add hazelnuts to potatoes if I hadn’t seen the recipe. People add pecans into sweet potato casseroles so why not hazelnuts in with some red potatoes?! Besides, any excuse to cook with Frangelico works for me!
I was recently browsing around my own site, in particular the recipes page. It was then that I noticed I hardly have any vegetable recipes. I promise, we really do eat veggies, quite a lot actually! Most vegetables we make are pretty simple, roasted or grilled. I guess that is why I haven’t posted more recipes. Continue reading
Lately I have been craving some good old German dessert. Back in the day, not that I will age myself with specific dates or numbers, I spent my senior year of high school in Germany. After an unpleasant experience with my first host family I had a wonderful time with my second family. My host mother, Mama, was the baker, my host father, Papa, was the cook. It was a division of labor that worked quite well.
Let me start by saying I love to bake, and usually I do not make baked goods light or healthy often. Baked goods are treats and meant to be made with all the good stuff like real butter. This recipe, however, is a somewhat healthier cookie.
