To say that these muffins are popular with the kids is putting it mildly! What can I say, I seem to have outdone myself. Frankly, I’m a little surprised.

Dulce De Leche
I feel I must begin this post with a warning: this recipe is extremely addictive, just ask my three sons!! First they enjoy a lick of the spoon after I season it a little, then they are asking to have it all the time. Frankly I’m surprised they haven’t gone hunting in the fridge for it.

Not only is it delicious, but this dulce de leche is so incredibly easy to make. How much easier can it get than opening a couple cans of sweetened condensed milk, pouring it into jars and letting the slow cooker do the work? I can’t think of much else that is easier than that! And the end result is completely sublime.

Need a way to jazz up your cheese plate? Spice up your life with some marinated feta cheese! It is beyond easy and yet the resulting cheese is so full of flavor.

With our herbs finally growing well it is time to have some fun. All right, the fun may have already started with plenty of minty cocktails. Mint grows and spreads really well so we have LOTS. The other day Sean and I had on Unique Sweets while I was getting our carpet picnic ready. Let’s just say this is a dangerous show to have on, so many delicious looking sweet treats. The good thing is that we don’t live near most of the places they go! Another good thing to come of it is that it is an inspiration, the result of which is this recipe.

Some restaurant on the show served a fruit studded focaccia for brunch. Why hadn’t I ever thought of that before?! I simply had to come up with a recipe for this. Sean agreed! Of course when he sees any food on television he usually wants it, “can we make that Mommy”!!

Easy Agua Fresca

Agua Fresca

The title of this post may be confusing you. Isn’t all agua fresca easy to make?! Well, I suppose it is. But this version is even easier, I promise! It uses an ingredient most of you probably haven’t even thought about.

Perhaps you don’t know what agua fresca is. It is simply water and fruit, combine the two and you have a very refreshing drink for those hot summer days. It may only be spring still, but here in South Carolina the heat has kicked in full force.
