Pumpkin Butterscotch Pudding

Halloween may be over but it is definitely still pumpkin season! I need to get more pumpkins to roast, purée and freeze for my stash before the season is over.

This little treat is the perfect autumn sweet. It is quick and easy to make so in my book that is just awesome! Then of course it can be packed in glass or stainless steel containers for a school treat. The boys beg for pudding cups which I refuse to buy, this homemade version though is perfect.

Pumpkin Cranberry Granola
It’s still pumpkin season, yippee! My favorite time of year. We go through granola phases and I had an epiphany last time I roasted some pumpkins. I was going to roast the pumpkin seeds and then realized we were in need of granola. Gee, think maybe we could kill two birds with one stone and put the pumpkin seeds right in the granola and roast it all together?!

Sometimes I amaze myself! Okay, so maybe I’m not the first person to come up with this idea. It did save me from an extra set of dishes and two rounds of pans in the oven though. I’m all for that.

All right, today’s post is not some ground breaking recipe. It is, however, a school lunch that I make the boys often and get lots of comments so I thought I would share it. It seems many people need a little school lunch pick me up and everyone likes this idea. Hmm, perhaps a school lunch box series is in my future…

Pay close attention, this is very difficult. NOT! All you need is a tortilla, regular or whole wheat, peanut butter and an apple. Spread the peanut butter on the tortilla, place apple slices along the middle in a row and roll it all up.

Black Bean Soup

Black Bean Soup
Now that it is slowly cooling off it’s time to get my soup groove on again. I just love soups, so versatile, easy and healthy. Let it sit on the stove all day and it’s ready to eat by dinner time. That is very important to me on swim days when I don’t have time to cook at dinner time, it must be ready as soon as I arrive home with three very hungry boys!

Not only is this black bean soup easy and healthy, it’s also pretty darn cheap. A bag of dried black beans won’t set you back much at all and the rest of the ingredients are usually around the house anyway.

Banana Cinnamon Hot Chocolate
I don’t know about ya’ll, but I’m thrilled that autumn is right around the corner. It’s next week you know. Sean’s birthday is actually on the autumnal equinox.

In our neck of the woods it cooled off a little recently. This has me very excited. It’s been hot for so long. Cooler temps are a welcome change. We recently had two evenings of an overnight low of 55 degrees Fahrenheit. Sean asked if we could have a fire after walking home from the bus stop in the morning. Yes, I have some Southern wimps!!

We were also able to finally eat outside again. Most people enjoy meals outdoors all summer long. Here in the South we stay in the air conditioning and wait for September to roll around to eat out again. We had a wonderful meal of rogan josh with homemade naan to celebrate Josh’s birthday. The boys actually came inside to put long sleeves on before we cut the cheesecake. Like I said, weather wimps!
