You might think I have lost my mind, but really I haven’t. Well at least not when it comes to this sandwich! You see, there is a story behind this sandwich. It goes back to when I was a college exchange student in Austria. Actually, it may even go back to when I was an exchange student my senior year of high school in Germany. Continue reading

Lemon Orzo Salad with Chick Peas and Feta
I love orzo. It is a super little pasta shaped like little grains of rice. It is rather versatile, but somehow I usually fix it the same way, simply with olive oil, lemon juice, lemon zest and freshly grated parmesan. It was time to remedy that situation!
Hazelnut Chocolate Fig Muffins

This week is going to be a little crazy for us since all three boys have swim lessons starting Tuesday. I decided to survive this schedule change it is going to require some planning ahead. Our biggest issues are dinner and breakfast. The boys will be eating their dinner at the gym twice a week while I work out and then they will have swim lessons. As for breakfast, Jack tends to sleep a little later the morning after swim so it will need to be portable to eat while walking to the bus.
Mango Piña Colada Smoothie

Sean and I are usually out most mornings. We drop off Ewan at preschool and then head to the gym. If we are lucky we have time to run an errand before it is time to pick up Ewan. Then there are days when there is just too much to do at home we don’t go out in the morning. Yesterday was one of those days…and Sean got to enjoy this smoothie for his morning snack! Seedlings, Day 10
The boys are enjoying watching all our seedlings grow! They know these will turn into plants that will grow in our garden. If you want your children to eat well I highly recommend you plant some vegetables and let the kids watch things grow. Let them help you in the kitchen. I know, they get in the way and slow things down, but they really do pay attention. My kids will eat just about any vegetable raw while I am chopping getting ready to fix dinner. Sean’s favorite is usually raw onion! Good thing he also eats the mint leaves off my plant, well good for his breath, not good for my plant!

Everything has sprouted except the peppers. The cabbages and broccolis are the biggest. Notice the leaning plants…always need rotating as they grow towards the sunny windows.

Notice Sean in the background, he helped water this morning and kept trying to get into my shots!
