The boys usually like just about every muffin. Favorites tend to have chocolate chips (orange coconut chocolate chip mini muffins) or peanut butter (peanut butter chocolate chip muffins). More unfrosted cupcake like than muffin like. Yes, they like nearly every muffin. But for their new favorite to be gluten free, I’m shocked! Continue reading
With our herbs finally growing well it is time to have some fun. All right, the fun may have already started with plenty of minty cocktails. Mint grows and spreads really well so we have LOTS. Add in two boys who just had to get chocolate mint plants and our herb boxes overfloweth with mint! Continue reading
The other day Sean and I had on Unique Sweets while I was getting our carpet picnic ready. Let’s just say this is a dangerous show to have on, so many delicious looking sweet treats. The good thing is that we don’t live near most of the places they go! Another good thing to come of it is that it is an inspiration, the result of which is this recipe.
Some restaurant on the show served a fruit studded focaccia for brunch. Why hadn’t I ever thought of that before?! I simply had to come up with a recipe for this. Sean agreed! Of course when he sees any food on television he usually wants it, “can we make that Mommy”!!
It is offcially summer break now! To start it off a bit rocky my husband had to leave the country for business the very first full day of break. That’s right, me and three rambunctious boys alone for nearly seven days. This calls for baking and keeping their mouths full. For our first morning without Daddy we made these muffins. They were a huge hit. Sean declared them “the bestest muffins ever”!
They provided the boys with enough energy to play outside and help in the garden. I planted some more zucchini and yellow squash seeds. Just because! I pulled up two big areas of lettuce last weekend and figured why not try to grow something it those spots. It is still a little early for the pumpkins seeds to go in and squash was the answer. We’ll see if it grows.
In this house we love hummus. It is such a nice and easy dip to serve with veggies and pita. When we go out to eat we like to get a hummus platter as an appetizer when it is available. Not that we need to quiet the boys with food before the meal comes or anything! Continue reading
For years I have been a fan of Trader Joe’s vanilla almond granola. It is so yummy, crunchy…almost perfect. It is a little bit too sweet for me. Not too much that it stops me from still loving it, but something I finally decided to improve upon and make my own.
I must warn you, this granola is seriously addictive! It all starts with an innocent hand full. And then another, and another…until you have no idea how much you have really eaten. Not that I would know from personal experience. Okay, confession time. I came home from the gym yesterday and kept nibbling while taking pictures of this granola. I did just burn over 1200 calories so it can’t be too bad can it?!
