
Our summer continues to be crazy busy, and that is without vacation!! The two older boys still have swim practice five days a week, meets two evenings a week. Needless to say that makes dinner time crazy. The only relaxed dinners are on the weekends. Otherwise we are packing dinner to eat at the meet or we get home just before six and have dinner that I prepared earlier in the afternoon or something I can throw together quickly. Continue reading
Tomato Time
Here is a quick photo update of the garden. This HUGE basket is just what I picked today!

The full size tomatoes are finally getting ripe. We have been eating the cherry and small yellow pear tomatoes for a couple weeks now.
Zucchini and squash are also still coming along. Needless to say we’ve been eating a lot of them too. I also made three loaves of zucchini bread Sunday night! This weekend will be a huge batch of zucchini tots to freeze. Should time ever allow…aka Josh not need my help with his garage, I may even find some time to can. Or not, time will tell!

Guess what’s for dinner here tonight? Pasta with homemade tomato sauce. Imagine that! Lunch was salad with lots of tomatoes and cucumbers. Breakfast was scrambled eggs with tomatoes. See a theme?!
Blackberry Cocktail
For the past two Sundays we have been blackberry picking. Last weekend I took the boys out early Father’s Day morning and we had great success. I had my eye on some wild blackberry bushes that we always drove by on the way to preschool. I decided early Sunday morning was the best time to pick since these bushes are on a somewhat busy road with several manufacturing facilities, which means work traffic coming and going. Orange Coconut Chocolate Chip Mini Muffins
I’m sure you have all seen the mini muffin “donut” craze on blogs already. I have been wanting to try it out and have several ideas. This particular muffin wasn’t even on my radar, but as I headed up to the mountains with the boys I knew I wanted to try something. I was first thinking something zucchini since it is plentiful in the garden right now. I brought up several zucchini with us, but alas, I have eaten most of them already!
Arugula with Blackberries and Chèvre

I think I have may have mentioned before how our lettuce in the garden is done. Well that wasn’t completely true. You see, somehow we managed to miss the packet of arugula seeds when planting the garden. So I planted them a while ago and now we have arugula! It won’t last long since the temps are up on the 90s so I am enjoying it as often as possible.
Over the weekend we also had our first blackberries. It wasn’t enough to do much, especially since Jack kept eating them while I was trying to pick them without getting too scratched up! It was enough, however, to put on a wonderful salad with arugula. I have had it a couple of times this week it is so simple and delicious.
